I’m a little late to the party this week!  Ack!  This week has been filled with appointments and interruptions.  Blah.  But here we are again ready to party and so ready to see what you’ve been up to!!

Fridays Unfolded Link Party {#138}

Is it Friday already??  Ready to party?


This week has simply flown by!!  Everyday has dwindled into nothing before I even get half-way through my list of things I needed to get done that day!  Agh!!  I am definitely feeling the pressure of the season this week.  What makes it better? – knowing my baby boy is coming home today to stay for a while this time.  πŸ™‚

So, in the midst of the crazy this week I did get a chance to add our Christmas home tour into the mix of all the lovely eye candy of Christmas home tours out there.  
But honestly, and I know this comes up now and again in the blog world, I feel the need to get real and show you what things actually look like around here after this crazy week, so you don’t get to thinking we are too perfect or anything. HA! (and yes, that’s my hubby in the kitchen trying to fix our fridge that decided to stop cooling on the refrigerator side this week – fun times – I love that he is willing to be handy)

Whew!  It feels good to get that off my chest!  No perfection here, just real life and some good staging skills.  So, if you’re feeling overwhelmed by all the pretty pictures of perfection around you, know that this is a safe place and all are welcome here!  πŸ™‚

Quick and Easy Taco Soup

Hey there friends!!  Is the month of December as crazy and hectic for you as it is for us?? Between Christmas shopping, kids sports, Christmas programs, and Christmas parties I find it hard to find time to cook! But, after a while eating out gets old, and expensive.  

This week I whipped up one of our family favorites that is really so quick and simple – Taco Soup. 


Maybe you have your own version of this, but I get asked about it all the time (cuz it’s so easy), so I thought I would share.  

Several years back I was looking for a tortilla soup recipe, but everyone I found had ingredients I didn’t have and I was not going to the store.  In my search, I also stumbled across a couple of taco soup recipes.  So, I took a little bit from each one, based on what I had on hand, and came up with this.

Taco Soup

1 – 1 1/2 lb. ground beef OR 3 chicken breasts
1 can of corn
1 can of diced tomatoes OR rotel
1 can of black beans 
1 can of kidney beans
Taco seasoning

First step – cook the meat.  If you are using chicken I have the best tip for some of you!  Own a kitchenaid mixer?  


Put the cooked chicken in with the paddle attachment, turn on low and watch that chicken shred!!  So much easier!

Second step – dump everything in.  

this time I did not have rotel but I did have a can of green chilies, so I added that
Third step – stir and heat.  Everything in that pot is cooked, it just needs to heat.  πŸ™‚


The longer it cooks the better it tastes, because it gives time for the flavors to mix together.  But if you only have 30 minutes for it to simmer, no problem, still yummy.  I have also cooked this in the crockpot.  Works great.  I use this homemade taco seasoning (tweaked a bit – I don’t care for cumin)

 – plus I know exactly what’s in it.

This recipe really is fool proof!!  


We like ours with a little shredded cheddar cheese on top and tortilla chips!  YUM!!

Fridays Unfolded Link Party {#135}

It’s Friday again!!  YAY!!  Time to party πŸ™‚

About a month ago, my friend so graciously agreed to pick up some lights at IKEA that I wanted for my kitchen.  They sat in the floor of my kitchen for a week or so, and my hubby asked if we were going to put them in…

I said “I will only start if you promise we will finish before Thanksgiving.”  And to that he went to get the ladder and a hammer.
